Sandvik 12C27 is the designation of the steel which you find in all stainless knife blades made by EKA.

This is a closely-monitored, high quality Swedish steel specifically developed for knives and surgical instruments.The knife blades are hardened to 57-59 Rc which makes the edge much better than knives from many other leading manufacturers.

A real quality knife that only the Scandinavians can seem to do, a real step above. A great comfort handle shape. I own one of these knives myself and it has given years of service.
