If like me you are struggling to work why you can end up spending £100 on a Japanese Water Stone then don't bother looking any further. I have used many different makes now and as far as I can tell there isn't much that separates the super expensive from the more economical products.
The ideal way to use these stones, I have found, is to soak them in water prior to use and sharpen away. There is no need to remove the slurry whilst sharpening as it acts as a good grinding paste. Simply clean and dry out after use.
